Pizza, Pizza, Pizza!

The Instagram poll clearly reported your craving for salty! It’s obvious that we stocked too much sweets during the last festivities. Even narrowing downs the requests that arrive on direct messages, many of you are afraid or do not know, how to make pizza at home. Given that most of you who follow me from Czech Republic, today we will put into practice the confirmation of the fact that you should not be worried to try what (you think) is impossible for you and what Italians have been doing at home for years especially on weekends.

Since the pizzerias are still closed, and the delivery pizza almost arrives lukewarm, I decided to give you a basic recipe for a dough that serves for 3 pizza types (and cravings). Practically like at the supermarket, pay 1 get 3!

The first is the classic small party pizzas, excellent for appetizers, buffets, birthdays and perfect to freeze and take out at the last moment.

The second is the classic pizza, which I seasoned in a basic way (pizza Margherita), it’s up to you to make changes by adding or replacing the ingredients (salami, anchovies, mushrooms, ham, etc.).

The third is the rosemary focaccia, excellent as a side dish or snack. In Italy when I was little and there was some left for the next day at school, I cut it in half, and made a sandwich with ham and cheese, and heaven opened up!

Ingredients:

  • 300 ml water
  • 3 tablespoons olive oil
  • 1 tablespoon sugar
  • 500 gr. strong flour
  • 10 gr fresh yeast
  • pinch of salt

Dissolve the sugar, oil and yeast in warm water. Add It to the flour that already has salt in it. Mix well on a pastry board and left to rest for at least 2 hours in a warm place, better if covered with cling film. For example, I close it in the oven with only the light on.

Once risen, use the dough for one of the variations or divide it into three ways as above if you have a buffet.

Season to taste, remembering that the mozzarella is add halfway through cooking to prevent it from drying out or burning too much.

Easy, right?

For those who follow a diet, but like me do not give up on good and sometimes caloric recipes, I recommend eating it for lunch and for dinner to go light.

And as Julia Roberts said in the film eat, pray and love:  “if due to pizza you don’t fit in your jeans anymore, buy a pair of a bigger size”.
